Delicious things happen when you put peanut m&ms and cream cheese frosting onto mini brownie cupcakes! I made these for a Valentine making party at the CakeSpy shop this evening. SO GOOD.
Another first in my baking obsession - cupcakes!
I don’t know why I have never tried baking them before, it’s one of the easiest thing to bake! (Brownies were the first ones I learned to bake). I was so easy, they used to call it 1234 cakes because of the number of ingredients used (i.e., one cup of butter, 2 cups of sugar, 3 cups of flour, and 4 eggs.) From a simple light cake, these babies have now risen to lifestyle status. Chic parties are never complete without cupcakes, they even have cocktail inspired frosting! For the past days, I have been looking for something to give a dear friend for her coming birthday, something nice and cute and of course, sweet! She’s a self-confessed cake lover so I’ve already got a lead! After an hour or so of searching, I stumbled upon this really sweet blog and found and equally sweet cupcake recipe. It has the perfect contrast of tastes, bitter sweet dark chocolate, sweet white chocolate, and sweet salty awesome bacon!
Wait a minute! Did the recipe say bacon?
With all due respect to its awesomeness, bacon in desserts is a very new thing for me, let alone my friends. So, I decided to put off bacon for a while. That still leaves me with a very tempting cupcake.
A small set back: my ganache didn’t turn out as heavenly as it’s supposed to be (Note to self: Practice making white chocolate ganache.) So, I just used the melted white chocolate as a flavoring to the whipped cream. I have no idea it what I did was right, but it tasted good - it must be right!
